1 Tablespoon EVOO
1 Chopped Onion
1 Tablespoon Minced Garlic
1 Yellow Squash
1 Cup Chopped Portobello Mushroom
Salt and pepper to taste or your favorite seasoning blend
- Spiral cut the zucchini and squash.
- Saute onion and garlic in EVOO until tender.
- Toss in the mushroom and allow to saute for 10 minutes.
- Add the noodles, stir mixture together and saute another 10 minutes.
- Serve with a grilled chicken breast or pork chop.
