Slow Cooker Vegetable Beef Soup

I love my crockpot! It's an easy way to make a delicious meal and not tie myself down in the kitchen. If you are a crockpot chef, this is the perfect recipe for you. Just prep it, set it, and forget about it!

  • 1 pound ground chuck
  • 1 cup chopped onion
  • 1 large (28 oz.) can whole tomatoes (chopped) (or 2.5 cups fresh chopped tomatoes)
  • 3 cup diced potatoes
  • 1.5 cups of green beans chopped
  • 2 teaspoon chili powder
  • 2-3 dashes cayenne pepper (optional)
  • 3 cups of beef stock or 2 beef stock cubes
  • ½ cup red pepper diced
  • 1 cup chopped celery
  • 1 cup sliced carrots
  • 1 teaspoon salt
  • 1 teaspoon Worcestershire sauce


Brown meat with onion and celery; drain off fat.

Add all ingredients to your slow cooker and add 2 cups of water (NOTE if using stock cubes, add 5-6 cups of water).

Cover and cook on low for 8-10 hours.


Yields 6 cups

Homemade Herbal Chicken Stock

Chicken stock is good for the soul. Homemade herbal chicken stock is good for body! Take an afternoon and cook up some chicken stock and keep it in your freezer. That way you have some handy the next time you make your favorite soup, stew or gravy.

  • 1 Whole Chicken, about 3 pounds
  • 8 cups water
  • 2 carrots, cut into 2 inch pieces
  • 2 stalks of celery, cut into 2 inch pieces
  • 1 medium onion, cut into large chunks
  • 2 cloves of garlic, crushed
  • 2-3 sprigs of parsley
  • • 1-2 sprigs of sage
  • • 2 sprigs of rosemary
  • • 2 sprigs of thyme
  • 2 tsp. salt


Cut the chicken up into pieces.

Put the chicken, and the rest of the ingredients into a large pot, and bring to a boil.

Reduce the heat to medium low, and simmer for 3 hours.

Remove the chicken, and place in a bowl to cool.

Pour the stock through a colander lined with cheesecloth, and chill.

When the chicken has cooled enough to handle, remove the skin and the bones, and freeze or refrigerate the chicken to use in another dish.

Skim the fat off of the stock, and refrigerate, freeze, or use immediately.

Don't feel constrained by the ingredients and amounts listed in this recipe. You can use other herbs for a different flavor. You could add ginger peels and lemongrass for an Asian flavor. Just let your imagination run wild.

You don't need to use a whole chicken either. You can buy the bone-in chicken breasts, and remove the bones before cooking. Then just put the bones in a plastic bag, and put them into the freezer. Then when you're ready to make the stock, just take the bones out and use them in the stock.

Once you've learned to make this chicken stock, you can use it as a basis for many different soups... chicken noodle soup, cream of chicken soup, vegetable soup... again, just let your imagination run wild with it, and enjoy!

  • 1 package Wildtree Robust Tortilla Soup
  • 3 ½ cups water
  • 1 pound roma tomatoes, diced
  • 1 cup corn
  • 1 (15.5 ounce) can black beans, drained and rinsed
  • 1 (4 ounce) can diced green chilies
  • 1 cup Wildtree Tia Rosa’s Red Enchilada Sauce


Combine the Robust Tortilla Soup mix with water in a large pot. Bring to a boil and then lower to a simmer. Stir in the remaining ingredients. Cover and simmer for 1 hour. Serve with corn tortilla chips and cilantro if desired.


You can also let this recipe simmer in a crock pot for a few hours.

  • 2 bell peppers, diced
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon cumin
  • 1 (15.5 ounce) can fire roasted diced tomatoes
  • 1 cup water
  • 1 (11 ounce) can corn, drained
  • 1 (15.5 ounce) can black beans, drained and rinsed
  • 4 ounces Neufchatel cream cheese
  • 1 package Wildtree Queso Skillet Meal


Add red bell pepper, chicken, cumin, diced tomatoes, and water to a slow cooker.

Cover and cook on high for 3 hours or until chicken is tender.

Shred chicken.

Add remaining ingredients to slow cooker and cook for another 30-40 minutes or until cream cheese is melted.

Stir to incorporate.

Serve with desired toppings
